Steadfast Diner Debuts at Eastmark!

We are so proud to welcome Steadfast Diner to Eastmark. Our hope for the diner was to offer our community a chef-run farm-to-table experience that is fun and memorable for all who visit. It was a natural fit to hand over operations of the Diner to Steadfast Farm where farmers Erich and Yvonne Schultz have been growing vegetables and flowers since 2018.

The couple enlisted their friend, James Beard Award-nominated chef Derek Christensen, to lead the kitchen at the diner. Christensen who has a background in high-pressure environments, won the Food Network’s “Chopped” and brings his culinary expertise to Steadfast Diner.

Christensen’s approach to cooking at Steadfast Diner emphasizes the direct connection between the farm and the kitchen. He highlights the importance of using fresh, locally sourced ingredients, which is convenient with the farm located just 100 feet from the diner. This proximity allows for a menu that changes with the seasons and the availability of produce, embodying the farm-to-table ethos.

Steadfast Diner offers a variety of dishes, including grain bowls, salads, and sandwiches, all featuring ingredients from Steadfast Farm. The diner also serves coffee, craft beer, wine, and signature cocktails. The Schultze’s plan to expand their operations, including adding a climate-controlled space to the diner to help it survive Arizona’s harsh summers.

The Steadfast Diner, originally a Valentine diner, has been refurbished and now serves as a community gathering spot in Eastmark. The Schultze’s aim to create a place where families can enjoy fresh, locally sourced food while fostering a sense of community.

Steadfast Diner opened on January 10th and offers a unique blend of farming and dining, showcasing how an urban farm can support a restaurant and create a sustainable food system within a suburban setting.
